5-Minute Strawberry Ice Cream

Everybody loves ice cream, but it is full ingredients we are often sensitive to along with a hefty dose of sugar, fat and calories.  But what if there was a way that you could enjoy a delicious bowl of ice cream that was not only fast and easy to make and satisfying but also good for you?  There is a way!  This detox-friendly, dairy-free and raw vegan strawberry ice cream is absolutely delicious and can be put together in just a few short minutes.  Kids love it, it is easy to personalize to your own custom flavor and it is a fun and healthy way to indulge.  Good food just tastes good.

Strawberry Ice Cream

5 Minute Guiltless Strawberry Ice Cream

2 frozen sliced bananas

1 C unsweetened frozen sliced strawberries

1 1/2 – 2 tsp Ground Vanilla Bean Powder (to taste)

6-8 Tb coconut milk (to desired consistency- start with less and add more as needed)

In a food processor combine the banana slices, strawberries, vanilla powder and coconut milk. Process until smooth and creamy, adding a little more coconut milk and vanilla powder to desired texture and taste.  Enjoy immediately for a soft serve texture, place in the freezer for an hour or two and briefly process in the food processor again for a harder ice cream texture or freeze into popsicle molds.  Enjoy!  Yields 4 small or 2 large servings.

There are countless combinations you can try depending on what is in season, in your fridge and your mood. Try my birthday cake ice cream, or add any kind of chopped unsweetened frozen fruit (mango, other berries, pineapple, peaches, young Thai coconut, pitted cherries, or just plain bananas…), a spoonful of your favorite raw nut, coconut or seed butter or whole raw nuts/seeds, raw cacao or carob powder, cacao nibs, your favorite superfood powder, cinnamon, pumpkin pie spice, cardamom, nutmeg or even cooked pureed pumpkin or sweet potato for pumpkin pie “ice cream.”
