Christmas Kale Salad

The holidays are quickly approaching, and I love it when there is a delicious, colorful, interesting salad at Christmas dinner. This is where my divine Christmas kale salad comes into play. It’s so easy but full of yummy ingredients and packed with nutrients and antioxidants to help fuel your winter break. It also gets better as it sits in the fridge overnight and is perfect for Boxing Day lunch.

The most delicious healthy Christmas kale salad with pomegranate seeds, pecans, and more for your holiday dinner!

 

Christmas Kale Salad 

1 bunch of kale (you could also start with a base of 3-4 cups of shredded Brussels sprouts to make a shaved Brussels sprout salad)

1 bunch of parsley, chopped

2 cups of grape or cherry tomatoes, chopped

4-6 mandarin oranges, peeled, segmented, deseeded, and chopped (or 1 large sweet crisp apple, like Gala or Honey Crisp)

1 cup pomegranate seeds

1/4 cup feta cheese, crumbled or shaved Parmigiano Reggiano (optional)

1/4 cup chopped raw unsalted pecans or pistachios

1/4 cup dried cranberries

 

The Best Vinaigrette Salad Dressing

1/4 cup freshly squeezed lemon juice or raw apple cider vinegar

1/2 cup extra virgin avocado or olive oil

1 clove of garlic, minced

1 tsp Dijon mustard

1-2 teaspoons raw honey or maple syrup

1 tablespoon coconut aminos

Salt and pepper to taste

 

 

Destem and chiffonade your kale and add it to a large salad bowl. Sprinkle the kale with a little coarse pink Himalayan salt and with clean hands massage the kale until it is softened, dark green, and appears cooked.

Add the parsley, tomatoes, oranges, pomegranate seeds, feta cheese, nuts, and cranberries and toss gently to combine.

In a high-speed blender combine the lemon juice or apple cider vinegar, avocado or olive oil, garlic, Dijon mustard, honey or maple syrup, coconut aminos, salt, and pepper, and blend until smooth and creamy. Adjust seasoning to taste (tip – use less salt with this Christmas kale salad recipe because the cheese is quite salty), drizzle over salad, and toss gently to combine. Enjoy!
