Raw Birthday Cake Ice Cream

One of the most requested foods that I receive from my clients and the Nutritionista community to revamp into something healthy is ice cream.  And really, what is there not to love?  Sweet, creamy, cold; all of which are perfect on a hot summer day.  This is my mega easy and super yummy 5-minute birthday cake ice cream that you can feel good about eating.  Enjoy!

Birthday Cake Ice Cream

4 peeled, roughly chopped ripe bananas, frozen

4-6Tb coconut or almond milk

2 Tb coconut butter

1 1/2 tsp Ground Vanilla Bean Powder

1 tsp caramel extract

1/2 tsp butter extract

Dash of salt

Rainbow sprinkles (optional)

 

 

Add the frozen bananas, 4 Tb of coconut or almond milk, coconut butter, vanilla extract, caramel extract, butter extract, and a dash of salt into a food processor.  Pulse on high until completely smooth and similar in texture to soft serve (you may need a little more coconut milk, adjust as needed).

 

Either serve immediately or transfer to a freezer-safe glass container and freeze for 30-60 minutes or until the consistency of hard ice cream.  Do not over-freeze.  Scoop into serving bowls, top with sprinkles, and enjoy!  xoxo
