Perfect Guacamole

Guacamole is probably my favorite kind of dip and is always a big hit at parties and events.  So many people just pick up a package of the pre-made stuff, but it doesn’t hold a candle to homemade guacamole made with fresh ingredients.  It couldn’t be any easier to make and is amazing with raw veggies, baked pita chips, with my healthy taco salad, or in wraps and sandwiches.  If you like very smooth guacamole, try using a food processor instead of just a bowl and fork or mortar and pestle.  Enjoy!

 

Perfect 5 minute raw guacamole via @bcnutritionista

Raw Guacamole

4 perfectly ripe avocados, peeled, pitted and cubed

Juice of 2 limes (or 1/2 a lemon)

1/2 tsp garlic powder

1/4 tsp cumin

1/4 tsp of red pepper flakes (optional, to taste)

1/4 C fresh cilantro or flat leaf parsley, roughly chopped

Unrefined Himalayan salt and fresh black pepper to taste

1/2 C cherry tomatoes, quartered and seeded (optional)

 

 

In a medium bowl or large mortar add all of the avocado cubes.  Mash lightly with a fork or pestle until roughly mashed.  Add the lime juice, garlic powder, cumin, and red pepper flakes and mash together until well combined and to your desired texture.  Gently stir in the cilantro or parsley and season with salt and pepper to taste.  Adjust seasoning to taste, adding more lime juice, spices or herbs if desired.

Transfer the guacamole to a serving bowl and garnish with cherry tomatoes and fresh cilantro or parsley and serve with raw veggies, baked pita chips or crackers, or any other favorite foods to dip.  Enjoy!
