Healthy Taco Salad + Raw Ranch Dressing

I know I have said “If your salad is boring, you’re doing it wrong” a thousand times, but it is so true!  Salad should be packed with flavor, texture, and color and should leave you full and happy.  Let me tell you; this healthy taco salad delivers just that.  My taco salad recipe is crunchy, filling, and decadently yummy and will keep you full for hours.

 

Hungry yet?  I know what I am having for dinner tonight.  It is definitely this taco salad.  😉

Healthy Taco Salad

3 C green leaf lettuce, chopped or torn into bite-sized pieces

3 C mixed baby greens

2 large heirloom tomatoes, chopped

1 large avocado, diced

1 C cooked black beans

1/3 C organic sharp Cheddar cheese (or your favorite soy-free vegan cheese), shredded

1/4 C fresh cilantro, chopped (optional)

2Tb green onion or chives, chopped

A handful of baked bean and rice chips, crushed coarsely (I use Beanfields)

Salsa, lime wedges, and/or guacamole, optional

Raw Ranch Dressing (recipe below)

 

In a large salad bowl add the leaf lettuce, mixed greens, tomatoes, avocado, and black beans and toss well.  Arrange on a platter or individual salad bowls and sprinkle with cheese, cilantro, green onion/chives, and crushed baked bean and rice chips.  Top taco salad with Raw Ranch Dressing and serve with salsa, guacamole, or lime wedges.  Enjoy!  xoxo

Raw Ranch Dressing

1 C soaked cashews, drained

3 Tb lemon juice

1 Tb coconut aminos

1 1/2 tsp maple syrup

2 Tb extra virgin olive or avocado oil

1 Tb raw apple cider vinegar

1-2 cloves garlic

1 Tb dried parsley

1/2 tsp onion powder

1-4 Tb water

Pink Himalayan rock salt and pepper to taste

1 Tb dried chives or 2 Tb fresh chives

 

In a high-speed blender, blend the cashews, lemon juice, coconut aminos, maple syrup, apple cider vinegar, garlic, parsley, onion powder, and 1 Tb of water until smooth.  Add more water, one tablespoon at a time, if needed until desired consistency.  Season to taste and stir in the chives.  Drizzle over taco salad or as a yummy dip for vegetables.  Enjoy!  xoxo
