Mermaid Lemonade

Truth be told, if I could be any mythical creature, I would be a mermaid.  Between a sparkly tail, dolphin friends, and perfect, voluminous hair, I am totally game.  But alas…  I’m a human, not a mermaid.  Don’t tell me I’m the only one who “hears” that in King Triton’s voice while reading it.

 

The next best thing to actually being a mermaid is my Mermaid Lemonade, with it’s sweet and lemony flavor and gorgeous Caribbean sea aqua color. It gets its color from E3 Live Blue Majik, which is an anti-inflammatory algae (spirulina) packed with antioxidants and nutrients.

 

Are you going to sip Mermaid Lemonade while wearing a sequin pencil skirt this sunny long weekend? I know I will be!

 

 

Mermaid Lemonade

1/4 C raw local honey (or B grade maple syrup if you would like to make this vegan; just keep in mind the color won’t be quite as pretty)

2 Tb hot, but not boiling, water

Pinch of pink Himalayan rock salt

1-2 scoops of E3 Live Blue Majik, to taste.  As with any superfood, start low and increase slowly.  

3/4 C freshly squeezed lemon juice

6 C filtered cold water

Fresh mint and lemon slices to garnish

 

 

In a small bowl, add the honey, hot water, and salt, and carefully whisk together until the honey is melted and completely combined.  Set aside for a few minutes to cool.  Once it has cooled, whisk in the Blue Majik powder until completely dissolved.

 

In a large pitcher, add the lemon juice, honey, and water.  Stir well to combine.  Serve chilled with ice and garnish with fresh mint and lemon slices.  Enjoy!

 

Variation: try using plain sparkling water instead of still water for a sparkling Mermaid Lemonade!
