Epic Gluten Free Apple Crisp

Is there anything more delicious on a cold fall or winter night than warm gluten-free apple crisp,  fresh from the oven?  Growing up, my Grandma and Mom’s family apple crisp recipe was always my favorite, and it still is.  But it is full of so. much. sugar.  And gluten…  Sadness.  💔

 

Obviously, I needed to revamp that old family recipe Nutritionista-style.  If I do say so myself, the results are spectacular and I like it even better than the original (sorry Grandma, love you. 😘)

 

This is DEFINITELY a must-try recipe this holiday season, and beyond.  I can’t think of a better dinner on a cold snowy night than a bowl of homemade soup, with a side salad and savory scone, followed by this most epic gluten-free apple crisp.

 

The most epic gluten free apple crisp you will ever put in your mouth. Reduced sugar and vegan adaptable.

 

Epic Gluten Free Apple Crisp

1 1/4 C old fashioned gluten-free oats

1/4 C coconut flour

1/2 C coconut sugar

1/2 C melted grass-fed butter or coconut oil

1 1/2 tsp ground cinnamon

1/2 tsp salt

5 C peeled and sliced apples

1/3-1/2 C B grade maple syrup (I use less)

2 tsp konjac powder

1/2 C water

1 Tb Ground Vanilla Bean Powder or pure vanilla extract

1 Tb fresh lemon juice

 

Preheat the oven to 350°F.

 

In a large mixing bowl, add the oats, coconut flour, coconut sugar, melted butter or coconut oil, and salt.  Mix well.  Press half of the mixture into the bottom of a 9-inch square pan.  Top with apple slices and set aside.

 

In a small bowl, whisk together the konjac powder with a tablespoon of water.  In a medium saucepan, add the konjac powder mixture, maple syrup, and remaining water.  Cook over medium-low heat, gently whisking constantly, until thickened.  Remove from heat and add vanilla and lemon juice.

 

Carefully pour the sauce over the apples.  Sprinkle the remaining crumble mixture evenly on top.  Bake for about 45 minutes or until the apples are tender.  Serve warm with vanilla banana ice cream and/or raw salted caramel.  Enjoy!  xoxo

 

*Vegan and dairy-free if coconut oil is used instead of butter.  Try reducing the apple slices by one half and adding 1 cup of fresh cranberries for a festive twist.
