The Best Ever Gluten-Free Bruschetta Pasta

September always feels like a serious, regimented, let’s get down to business kind of month.  The whole back to school vibe really gets to me, even though I have long since graduated and don’t have kids.

 

But alas, despite a hectic schedule, a girl has to eat.  I love quick, easy, and healthy recipes that I can make in 20 minutes, start to finish.  My best ever gluten-free bruschetta pasta recipe (with a margarita/Caprese twist, no less) is just one of those super fast and easy recipes that pulls itself together in just a few short minutes with minimal effort.  It is also super yummy hot or cold the next day for lunch.

The Best Ever Gluten Free Bruschetta Pasta

Drained zucchini noodles, from 4 zucchinis, or 4 servings of 100% whole grain gluten-free pasta, or paleo-friendly pasta

1 Tb coconut oil

4 cups mixed red and yellow cherry or grape tomatoes; halved or quartered

3-4 cloves of garlic, minced

6 cups baby spinach

Pink Himalayan salt and freshly ground black pepper, to taste

1 cup fresh basil leaves, torn or chiffonade

1 Tb fresh oregano, chopped

1/2 cup shredded mozzarella or crumbled feta (optional, skip or replace with vegan nut cheese if you would like to make this vegan or paleo)

1/4 cup raw pine nuts

1 1/2 Tb extra virgin olive oil

Cook the pasta, if using, according to the package directions.  Meanwhile, heat a large skillet over medium heat.  Add the coconut oil and tomatoes and cook, stirring frequently for 2 minutes.  Add the garlic and spinach, and cook for 3-5 minutes, until fragrant and the spinach has wilted.  Turn off the burner and remove skillet from heat.

 

Drain the pasta, reserving a few tablespoons of pasta cooking water, and add the pasta to the sauce.  Add the salt, pepper, basil, oregano, cheese (if using), pine nuts, and olive oil and toss well until fully combined.  Taste, adjust the seasoning as necessary and serve.  Enjoy!

 

 

*To make this Bruschetta Pasta vegan, skip the cheese or use your favorite vegan nut cheese.  To make this paleo, use either zucchini or paleo-friendly pasta like Cappello’s and either skip the cheese or use a dairy-free nut cheese.
