Raw Mini Salted Caramel Apples

Caramel apples are a classic October treat, especially between Thanksgiving (yes it is in October here in Canada) and Halloween.  Unfortunately they are typically loaded with high fructose corn syrup and bad fats and are served in monstrous portions. Halloween food doesn’t have to be scary!

But that doesn’t mean that you can’t enjoy fun comfort food favorites, with a few small healthier changes (including my incredible raw salted caramel recipe) and much more reasonable portion sizes it is ok to enjoy a treat once in a while.  I hope you enjoy my mini raw salted caramel apple recipe at your next festive get together!

 

Raw salted caramel apples you can make in 10 minutes (without the pot of boiling sugar or huge mess!)

Mini Raw Salted Caramel Apples

2 large Granny Smith Apples

Raw salted caramel

2 Tb chopped raw nuts, cacao nibs or shredded unsweetened coconut

 

Using a melon-baller scoop out round balls of the apple and lightly blot each with paper towel.  If the apple is too juicy the caramel will not stick.  Dip each apple ball about half-way into the caramel, gently pressing the caramel onto the apple if it is starting to slip.  Lightly press the bottom of the caramel covered apple into the chopped nuts, cacao nibs or shredded coconut to cover the base.  Enjoy!
