Skinny Greek Breakfast Scramble

Who doesn’t love a simple brunch with friends?  This quick and easy breakfast scramble is full of flavor, a breeze to make, and loaded with protein, non-starchy veggies, and essential nutrients.  It is delicious, keeps you feeling full and satisfied and is a great recipe to support your weight loss goals.  Think beyond breakfast and brunch; you can even have it for a fast and simple lunch or dinner along with a salad or grilled veggies on the side.  Delicious, real food doesn’t have to be complicated.

Skinny Greek Breakfast Scramble

2 tsp coconut oil

1 small red onion, diced

1 C sliced mushrooms

2 cloves of garlic, finely minced

6 C baby spinach (or any favorite baby green)

2 tsp dried oregano

1 tsp dried basil

1/8 tsp nutmeg

1/4 C fresh parsley, finely chopped (or 1-2 Tb dried)

Fresh black pepper and unrefined pink Himalayan salt, to taste

8 organic egg whites

2 Tb organic feta cheese, crumbled (optional)

Sliced or diced seeded tomatoes

Fresh basil, oregano, chives and/or parsley

*Dairy-free and paleo if you omit the feta cheese.

 

 

In a ceramic non-stick pan melt the coconut oil over medium heat.  Saute the red onion for 3-5 minutes, or until translucent.  Add the mushrooms and saute, stirring often until mushrooms are softened.  Add the garlic and spinach and saute for 1-2 minutes, stirring constantly, until the spinach is wilted and the garlic is fragrant.  Sprinkle with the oregano, basil, nutmeg, parsley and season to taste with salt and pepper.  Toss well.

 

Pour in the egg whites and toss well with vegetables, using a silicone spatula.  Allow any uncooked egg to flow underneath and cook until the eggs are about 80% set.  Add the feta if using and continue to cook until the eggs are cooked through and the cheese has softened.  Immediately remove from heat, sprinkle with fresh tomatoes, garnish with fresh basil, oregano and/or parsley and serve.  Enjoy!
