Cookie Dough Protein Bites

Who doesn’t love cookie dough?  I think many people actually like the dough better than the baked cookies themselves!  This is actually a recipe adapted from one of my favorite healthy food blogs Bodhi Life Ltd.  I love to make a batch of these at the beginning of the week and keep them tightly covered in the fridge to snack on throughout the week.

This recipe has protein, slow carbs, good omega 3 fats, fiber and antioxidants and is a source of magnesium, vitamin E and manganese.  It is easily vegan adaptable by substituting B grade maple syrup for the honey.  With the cacao nibs it tastes like chocolate chip cookie dough and with the goji berries it has more of a peanut butter and jelly flair.  Ashley’s version is delicious too, so I would highly recommend trying these all three ways. Enjoy!

Insane raw chocolate chip cookie dough protein bites.

Chocolate Chip Cookie Dough Protein Bites

¾ C raw natural almond butter (walnut, hazelnut, pumpkinseed and macadamia all would be great too; be creative)

3 Tb raw honey (or 3-4 Tb B grade maple syrup for a vegan option, although it will no longer be 100% raw)

1 C sprouted raw buckwheat groats- pulsed in a food processor until the texture of oats.  If you can’t find these use a raw, plain hot buckwheat cereal (like Bob’s Red Mill Creamy Buckwheat Cereal) instead. 

½ C unsweetened shredded coconut

1 Tb coconut flour

½ C chopped raw unsalted almonds, or any favorite chopped unsalted raw nut or seed

2 Tb raw chia seeds

¼ C raw cacao nibs or goji berries

1 ½ tsp vanilla bean powder (or pure vanilla extract)

1/4 tsp ground cinnamon

Pinch of unrefined fine sea or HImalayan salt

In a food processor or a large mixing bowl combine the nut butter and honey and pulse or mix until combined.  If mixing by hand, add all the dry ingredients into another bowl and stir until combined.  Add the dry ingredients to the wet ingredients and either pulse or mix until well combined and the consistency of cookie dough.

Roll tablespoon sized balls of the dough in your hands and place into a glass container with a tightly fitting lid.  Store in the fridge and enjoy either cold or at room temperature.  Makes 20-24 balls.

    I love these! I have made them 3 times now, and have enjoyed the variations. I thought they would be just for me, but my husband enjoys them as well. Just made them with cashew butter – best yet! Thanks!
