Benefits of Kale

Today is national kale day!  What is all the hype about kale? Kale is a dark green leafy vegetable and my personal favorite superfood. Just one cup of cooked kale contains 1,327% of your daily intake of vitamin K, 354% of your daily intake of vitamin A and nearly 89% of your daily vitamin C among many other nutrients!

 

It is also a good vegetarian source of the essential amino acid tryptophan which is a building block of the neurotransmitter serotonin helping us sleep, feel relaxed and happy. Apart from the basic nutrients in kale, it is loaded with antioxidants and flavonoids that have been shown to help prevent cancer, protect the cardiovascular system and detoxify in addition to being extremely anti-inflammatory.

 

So how to enjoy kale? I recommend eating it however you would enjoy other greens such as spinach or Swiss chard. Chop it up and throw it into soups, stews, stir-fry, egg white omelets, pasta sauces, chili; lightly saute it with a little olive or coconut oil, garlic, Celtic sea salt and pepper; eat it raw in salads (massage the leaves first to make them more tender and palatable raw); wrap your favorite sandwich fillings in a flat dinosaur kale leaf or add a leaf or two to your favorite green smoothie.
